"We don't begin with what's easiest to grow. We begin with what consumers will love," Calvo said. "From there, we work backward through the entire value chain to deliver that experience consistently, at scale."

That question has already reshaped the produce aisle. Sun World pioneered the first commercialized seedless watermelon, easy-peel mandarins, and the seedless lemon, each one a case study in removing barriers between great fruit and the people who eat it.
